There are lots of root beer extracts out there, we have tried several and prefer the simple McCormack stuff we kind find in the spice aisle at the grocery store.

The sugars in this recipe are not precise, just make sure you have 2kg total in sugars, and the more different and characterful kinds you have (demara, turbinado) the more complex your root beer will be. Honey is great in here too, a pound or even two can sub directly for any of the sugars. 

Kegged Root Beer

  • 3 fl oz (one and a half bottles) McCormack root beer extract
  • 2# or 900g Turbinado sugar
  • 1# or 450g Dark brown sugar
  • 1.5# or 650g white cane sugar
  • 1/4# maltodextrine. You can get this at a homebrew store. It adds head and mouthfeel, and maybe a little bit of sweetness.
  • 2tbsp vanilla extract
  • 5 gallons R.O. or deionized water

 

Heat water to boil. Dissolve all sugars with hot water in a 2L or 4L pitcher, then put dissolved mixture into keg.

Start filling keg with hot water. Add extract when the keg is about half full Add vanilla right before you close the top to retain as much aroma as possible.
